These American style pancakes with a hint of cinnamon are light, fluffy and not only easy but also quick to make, great for feeding a group of people, topped with delicious sweet toppings like Maple Syrup, Butter, Sugar, Jam, Peanut Butter, Nutella or your favourite fruits.
Makes 8-12 Pancakes
Ingredients:
200g Self Raising Flour
1 Tbsp Caster Sugar
1 Tsp Ground Cinnamon
1.5 Tsp Baking Powder
1/2 Tsp Salt
3 Medium Eggs
30g Butter (Melted)
200ml Milk (Semi-Skimmed)
Your favourite Toppings: Butter/Maple Syrup/Treacle/Sugar/Nutella/Jam/Peanut Butter or your favourite fruits.
Method:
In a Mixing Bowl or Mixing Jug, combine the Flour, Caster Sugar, Baking Powder, Ground Cinnamon & Salt.
Create a well in the middle of the mixture and add the Eggs, Milk & Melted Butter.
Mix/Whisk together until you have thick smooth mixture.
Heat a large frying pan over Medium-High heat and add a little oil or butter.
Using a ladle, add enough batter at a time to create a pancake 7-8cm in diameter, be careful not to put them too close together as the batter does spread a little during cooking.
Cook your pancakes for no more than 2-3 minutes until bubbles start to appear on the surface.
Carefully flip the pancakes over and cook for another 1-2 minutes.
Depending on the size of your frying pan, you may be able to cook 3-4 pancakes at a time, keep repeating steps 5,6 & 7 until all the batter is gone, this should yield 8-12 pancakes depending on the size and thickness.
Serve topped with your favourite pancake toppings.
Note: I love these pancakes topped with Maple Syrup, Peanut Butter or Nutella... sometimes all 3 together.
