Sticky Lemon Rice

A super easy and simple Sticky Lemon Rice that is bursting with a Tangy Lemon Flavour, a great way to turn plain rice into a perfect accompaniment to any Fish or Vegetable Dish.

Serves 2 - Approx. 157 KCal per Portion

Ingredients (Serves 2 – Approx. 157 Kcal per Portion)

  • 1 Cup Long Grain Rice

  • 2-3 Tbsp Lemon Juice

  • 1 Tbsp Butter

  • ½ Tsp Sea Salt

  • Zest of 1 Lemon

  • 1 Clove Garlic (Grated)

  • 2 Tsp Dried Parsley

  • 420ml Water


  1. In a large saucepan, bring 420ml Water to the Boil and add the Rice & Lemon Juice, bring back to a simmer and leave to cook for 8-9 minutes.

  2. Add the Butter, Salt, Lemon Zest, Garlic & Dried Parsley and mix well, and leave to simmer for a further 4-6 Minutes (until no water remains).

  3. Give it a final stir, and the butter that was added should bring the rice together in a sticky format.

  4. Serve topped with a sprig of Fresh Coriander.

Tip: Goes great with my Sweet Chili Salmon
