Smoked Salmon Fardels

Simple and Delicious Smoked Salmon Fardels, packed with a light zesty cheese filling that superbly compliments the Smoked Salmon, perfect as a starter for any occasion, or a light lunch on a warm summers day.

Ingredients Makes 4 – 162 Kcal per Portion

  • 2” Piece Cucumber

  • 200g Smoked Salmon

  • 200g Cream Cheese

  • 1 Tbsp Fresh Chives (Chopped)

  • 1 Tbsp Fresh Dill (Finely Chopped)

  • 1 Tbsp Lemon juice

  • Sea Salt

  • Freshly Ground Black pepper

  • 4 Lemon Wedges (Optional, for Serving)



Method

  1. Cut the cucumber in half lengthways and scoop out the seeds and discard.

  2. Dice the remaining Cucumber in small pieces.

  3. Line the base of four ramekins with a disc of non-stick baking parchment.

  4. Then use the Smoked Salmon to line the base and sides of dishes, making sure there are no gaps, making sure a little bit flaps over the edge of the dishes.

  5. In a Bowl, combine the Cream Cheese, Cucumber, Chives, Dill, Lemon Juice, Pinch of Salt and Pinch of Black pepper

  6. Divide the filling between the dishes, pressing down well. Fold over the loose salmon, cover with Cling Film and chill for 2 to 3 hours.

  7. Loosen side with a blunt knife and turn out onto serving plate.

  8. Serve with Salad and Lemon Wedges.
