A quick and simple seafood pasta served with King Prawns, Garlic Mussels, Scallops & Spaghetti combined with a tomato & mascarpone sauce to create a creamy and delicious dish.
Ingredients (Serves 2)
200g King Prawns
400g Mussels (In a Garlic Based Sauce)
200g Scallops (Frozen)
200g Tomato Based Pasta Sauce (I use Tomato & Mascarpone)
2-3 Cloves Garlic (Diced)
2 Tbsp Butter
1 Tbsp Extra Virgin Olive Oil
Heat a Large Wok over Medium-High Heat.
Add the Butter, Garlic & King Prawns and heat for around 5 minutes.
Add the Scallops to the Wok with the Prawns and heat for another 5-6 Minutes
Whilst the Prawns and Scallops are Cooking, Boil Water in a large Saucepan and add the Spaghetti/Pasta and Boil for 10-12 Minutes.
Whilst the Spaghetti and Prawns are cooking, Heat the olive in another saucepan to High Heat and add the Mussels, Cover and leave to simmer for 5-6 Minutes.
At the same time that you put the Mussels in, add the Tomato based sauce to your Prawns and Scallops and leave to heat through whilst the Spaghetti/Pasta finishes cooking.
Once the pasta is finished, drain and add to the Wok with the Prawns and combine together.
Serve into Bowls or Plates and place the Mussels around the Spaghetti/Pasta.
Enjoy with a slice of Garlic Bread.
