Fruit Cake

Packed full of dried fruits and glazed cherries, bound together by a sweet mixture of Flour, Butter, Eggs and Sugar. This fruit cake is both delicious and easy to make.


Serves 8-12




Ingredients:

  • 300g Mixed Dried Fruit

  • 100g Glazed Cherries (Halved)

  • 125g Butter (Room Temperature)

  • 3 Large Eggs

  • 4 Tbsp (65ml) Milk

  • 1 Tbsp Jam (Any Flavour) (I use Strawberry)

  • 125g Dark Brown Sugar

  • 250g Self-Raising Flour

  • 1 Tsp Ground Cinnamon

  • 1 Tsp Ground Nutmeg



Method:

  1. Preheat the oven to 170°c / 150°c (Fan Oven)

  2. Line a 2 lb Loaf tin with Baking Paper

  3. In a large mixing bowl, combine the Flour, Butter, Eggs, Milk, Jam, Sugar, Cinnamon & Nutmeg.

  4. Mix and beat together lightly.

  5. Add the dried fruit and glazed cherries stir in by hand. (be careful not to break up the fruit)

  6. Add the mixture in the tin and even out around the tin.

  7. Carefully using a knife to make a slight depression in the top of the mixture. (See below image - this will stop the top 'over-doming')

  8. Cook for 1 hour 20 minutes.

  9. Take the cake out and poke with a wooden skewer, if the skewer comes out clean the cake is done. If not, return to the oven for 5-10 minutes and repeat, You may need up to 1 hour 45 mins.

  10. When done, take the cake out of the oven and leave in the tin for 10-15 minutes before turning out onto a wire rack to cool

  11. Serve and Enjoy

Note: Can be stored in an air tight container in the liner in the fridge for longevity.
