Egg Fried Rice

Chinese style sticky Egg Fried Rice, perfect accompaniment to a Chinese Fakeaway meal.


Serves 4 - Approx. 177 KCal Per Portion



Ingredients (Serves 4 - Approx. 177 KCal Per Portion)

  • 300g White Rice (Cooked)

  • ½ Tsp Cooking Oil

  • 3 Tbsp Light Soy Sauce

  • ¼ Tsp Chinese Five Spice

  • 1/2 Cup Frozen Peas

  • 1/2 Cup Finely Diced Carrot

  • ¼ Tsp Salt

  • ¼ Tsp Black Pepper

  • 2 Large Eggs (Beaten)

  • 2 Spring Onions (Sliced)



Method

  1. Cook the Rice as per the manufacturers packaging.

  2. Heat the Oil in a Wok over Medium-High Heat

  3. Add the Rice, Soy Sauce & mix until all of the rice is lightly coated

  4. Add the Peas & Carrots and cook for 4-6 Minutes

  5. Add the Five Spice, Salt & Pepper and mix in, cook for another 2-3 minutes.

  6. Create a circle in the centre of the Pan, pour in the beaten Eggs.

  7. Leave for a few moments, as it starts to cook, stir it into the Rice.

  8. Serve topped with Spring Onions
